Salted mushrooms are a big part of traditional Estonian cuisine, especially in the eastern and southern parts of the country, where they are gathered during mushroom season and preserved to be eaten in breads and salads year-round. Use salted mushrooms sold in cans or jars, rather than fresh mushrooms, for this recipe.

Ingredients
Salad:
- 16 oz (450 g) salted mushrooms, diced
- 1 large granny smith apple, peeled and diced
- 1 small onion, finely chopped
- 2 small baby kosher dill pickles, diced
Dressing:
- 1/2 cup (120 ml) sour cream
- 1/2 cup (120 ml) mayonnaise
- 3 Tbsp (45 ml) chives, chopped
- 1 tsp (5 g) salt
- 1/2 tsp (2.5 ml) black pepper, freshly ground
Directions
- In a bowl, combine the mushrooms, apple, onion, and pickles. Mix well.
- In a separate bowl, combine the sour cream, mayonnaise, chives, salt, and pepper. Mix thoroughly to create a dressing. Stir the dressing into the mushroom mixture and chill for at least 1 hour before serving.
Notes
