Sõrnikud (Fried Cheese Curd)

These fried cheese curd patties, called sõrnikud, are a sour, salty, savory snack with a soft cheesy interior and a crispy fried crust. Sõrnikud came to Estonia from Russian and Ukrainian culinary traditions.

Ingredients

  1. In a large bowl, combine the curd cheese, flour, egg, caraway seeds, sour cream, and salt and mix thoroughly.
  2. Let the mixture stand for 15 minutes.
  3. With moistened hands, form the mixture into small patties.
  4. Dip the patties into the semolina or breadcrumbs.
  5. In a frying pan set over medium heat, heat the vegetable oil.
  6. Fry the patties until slightly golden, 3–5 minutes per side.

Notes

To intensify the sour, cheesy taste of these patties, top them with a dollop of sour cream.
