Breadsticks

Breadsticks, said to have originated in Italy, are long sticks of bread made from wheat flour. There are two distinct varieties of breadstick. The first is a dried breadstick that is crisp, crunchy, and similar to a cracker. The other, and perhaps the more popular of the two in America, is soft and fluffy. Breadsticks are often served with pasta, soups, and salads, or as an appetizer with dipping sauce.

Ingredients

    Dough:
    • 1 cup plus 2 Tbsp water, warm
    • 1 package (1¼ tsp) instant yeast
    • 2 Tbsp sugar
    • 3 Tbsp unsalted butter, melted
    • 1¾ tsp salt
    • 16 oz (3⅓–3½ cups) bread flour
    Topping:

    Directions

    1. Combine the water, yeast, sugar, butter, and salt in a large bowl.
    2. Add the flour gradually while mixing with an electric mixer on low speed at first and then increasing to medium.
    3. Knead the dough for about 7 minutes or until it is smooth and elastic.
    4. Transfer the dough to a greased bowl and cover it with plastic wrap. Let the dough rest in a warm place for about 1½ hours or until it has doubled in size.
    5. Divide the dough into 12 2-ounce pieces and roll them each into 7-inch-long logs. Place the logs on a parchment-lined baking sheet, cover, and let it rise for about 60 minutes or until doubled in size.
    6. Preheat the oven to 400°F.
    7. Bake the dough for about 12 minutes or until golden brown.
    8. Remove the breadsticks from the oven and immediately brush them with the melted butter for topping.
    9. Combine the salt and garlic powder for the topping and sprinkle it evenly over the breadsticks.
    10. Serve the breadsticks warm.
