Catfish, named for their whiskered appearance, are a popular ingredient in Cajun cuisine. The hardy catfish lives in both inland and coastal waters of every continent. There are many different species of catfish, most of which live in the Americas. Catfish are particularly abundant in the southern United States and so are catfish recipes, like this creamy dip.

Ingredients
- 1 lb catfish fillets
- 2 tsp water
- 1 lb cream cheese, softened
- 13 oz spreadable cheese (garlic-herb flavor recommended)
- 4 green onions, thinly sliced
- ½ cup minced fresh parsley
- 1 Tbsp lemon juice
- 2 tsp Worcestershire sauce
- ¼ tsp garlic powder
- ¼ tsp cayenne pepper
- 1 dash paprika
- 1 can (6 oz) crab meat, drained and rinsed
- 1 can (6 oz) small shrimp, like bay, drained and rinsed
- Salt, to taste (optional)
- Assorted breads and raw vegetables, as needed for serving
Directions
- Rinse catfish, dry by dabbing with paper towels, and place into a 2-quart microwave-safe dish.
- Cover and microwave on high for 4–6 minutes, or until fish flakes easily.
- Drain and discard any liquid remaining after microwaving.
- Flake fish into little pieces with a fork and set aside.
- Combine cream cheese and spreadable cheese in a bowl until smooth.
- Add onions, parsley, lemon juice, Worcestershire sauce, garlic powder, cayenne pepper, and paprika. Mix well.
- Stir in crab, shrimp, and cooked catfish.
- Cover and refrigerate for about 2 hours.
- If desired, salt to taste.
- Serve with assorted breads, crackers, or raw vegetables.
