Disco fries is a regional dish served at restaurants throughout New Jersey, which is known as the diner capital of the world with an estimated 525 diners. Those establishments helped popularize this dish of French fries covered in brown gravy and mozzarella cheese during the 1940s; however, it wasn’t until the 1970s that it was given the name disco fries because it was a favorite late-night food enjoyed by disco dancers after they left the clubs. Adapted from the Canadian dish known as poutine, disco fries uses shredded mozzarella cheese instead of cheese curds.

Ingredients
Fries:
- 2 lbs crinkle-cut french fries
Gravy:
- 4 Tbsp butter
- 1 small shallot, minced
- 1 garlic clove, minced
- Salt, to taste
- Freshly ground black pepper, to taste
- ¼ cup all-purpose flour
- 3 cups beef stock
- 2 tsp Worcestershire sauce
Assembly:
- 8 oz shredded mozzarella cheese
- Sprigs of parsley, as needed for garnish (optional)
Directions
- Preheat oven to 425°F and line a baking sheet with parchment.
- Spread the fries in a single layer on the baking sheet.
- Bake the fries in the oven until golden and crisp.
- Melt the butter in a medium-size saucepan set over medium-low heat, and then add the shallot and garlic.
- Season with salt and pepper.
- Continue cooking for 5–7 minutes until the shallot and garlic are soft.
- Sprinkle in the flour and cook for 3 more minutes, stirring frequently.
- Whisk in the beef stock slowly.
- Add the Worcestershire sauce and season with additional salt and pepper, if desired.
- Bring the mixture to a low boil, then reduce heat, and simmer for about 5 minutes, until it thickens.
- Remove the fries from the oven and sprinkle them with shredded mozzarella cheese.
- Return the fries to the oven for about 3 minutes, until cheese melts.
- Remove the fries from the oven and transfer them to serving plates.
- Pour warm gravy over the fries and garnish each serving with a sprig of parsley, if using.
