Filet Americain is a preparation of minced raw beef and spices. Its raw ingredients may surprise cooks in the US, as FDA regulations caution against consuming raw ingredients. This dish, however, is a popular food in Belgium and the Netherlands, where it is called American beef filet. It is spread on sandwiches or served with a salad and french fries. In Belgium, filet Americain is most often served on a crusty baguette with capers, diced onions, and pickled gherkins. Use high-quality, tender raw beef for this recipe for the best results.

Ingredients
- 8 oz lean beef
- 4 egg yolks
- 2 Tbsp ground-nut oil
- 2 Tbsp capers (preserved in vinegar)
- 12 small gherkins (preserved in vinegar)
- 1 Tbsp minced parsley
- 1 Tbsp Worcestershire sauce
- 1 Tbsp onion, minced
- Salt, to taste
- Ground black pepper, to taste
Directions
- Mince the beef to a fine consistency.
- Combine the minced meat, egg yolks, oil, capers, gherkins, parsley, Worcestershire, onion, salt, and pepper in a large bowl.
- Divide mixture into four even portions and shape them each into a cylinder.
- Serve raw, spreading over bread or crackers.
