Fried cheese curds are a Midwestern version of a well-loved recipe—fried mozzarella sticks. One difference in preparation is that this authentic Wisconsin recipe is made from the curds of the cheese. Cheese curds are pieces of curdled milk that are gathered before they are pressed into a block of cheese. Curds can be purchased in sealed packages from almost any supermarket and are notable for squeaking when bitten into. Wisconsin has long been a leader in cheese production, as well as creative cheese recipes. Try fried cheese curds with marinara, ranch dressing, or any other favorite dipping sauce.

- Heat oil in a large skillet or a deep fryer until the oil reaches 375°F.
- Whisk milk, flour, beer, salt, and eggs together in a mixing bowl until a smooth, thin batter is formed.
- Add cheese curds into the batter, a few at a time, until coated. Remove curds from batter with tongs or a wire strainer and shake lightly to release excess batter.
- Deep fry curds for 1–2 minutes, or until golden brown.
- Drain pieces on paper towels.
- Serve hot.
