Guacamole is an avocado-based dip most often enjoyed with tortilla chips or spread onto sandwiches and wraps. Avocado is savory like a vegetable; however, botanically it is considered a fruit, which is native to south-central Mexico. Avocados were first mashed over 2,500 years ago when the Aztecs of Mesoamerica used a molcajete—a mortar and pestle made of basalt—to create the first guacamole. The term guacamole comes from the Nahuatl word ahuacamolli, meaning avocado sauce. The mildly nutty flavor and creamy texture of avocados is enhanced by onions, garlic, salt, and lime juice. A bit of diced jalapeño can add a little heat, and some variations include pico de gallo, diced tomatoes, and cilantro.

- Slice avocados in half and remove the pit. Scoop out flesh.
- Coarsely mash the avocado flesh using a fork or mortar and pestle.
- Stir in the garlic, jalapeno, salt, pepper, and cilantro.
- Add the lime juice.
- Taste and adjust seasonings.
- Serve with tortilla chips.
