The state of Maine is famous for its large Atlantic lobster. Most commonly steamed and served whole with melted butter, lobster should be kept alive until ready to cook. Lobster meat is used in many recipes in Maine, including the easy, cheesy recipe here. Lobster’s status has evolved; once considered food for the poor due to its abundance, it is now seen as a high end dish, a shift that occurred in the late 1800s.
