Pakoras originated in India, where they are a popular street food, but their popularity has spread throughout the world, and today pakoras are a common appetizer on Indian restaurant menus in the West. The name of the snack comes from a combination of the Sanskrit words meaning "cooked" and "small lump." They are usually built around one or two main ingredients, such as onion, potato, cauliflower, or Indian cheese, that are fried in a batter made of chickpea flour.

Ingredients
- 1 cup chickpea flour
- 1 small onion, minced
- 1 green chile, minced
- ¼ tsp baking powder
- ½ tsp ground cumin
- 1 tsp garam masala spice blend
- Cilantro, to taste
- Mint leaves, to taste
- Salt, to taste
- ½ cup water
- Vegetable oil, for deep frying
Directions
- Mix all dry ingredients together.
- Slowly add water until mixture becomes a thick paste.
- Heat oil for deep frying over medium-low heat.
- Drop tablespoons of batter into the hot oil and fry, being careful not to crowd pan.
- Turn and cook on both sides until golden brown.
- Serve hot with dipping sauces such as mint chutney or tamarind sauce.
