Papadums (also called papads and appalams) are divinely crunchy lentil wafers often eaten with chutney. This combination is a favorite Indian appetizer. Indian immigrants to the United States brought their favorite recipes with them and papadums are one. Quick and easy to make from scratch, these crunchy bites can often be found in the Indian section of grocery stores.

Ingredients
- 2 cups lentil flour
- ½ tsp cumin
- ½ tsp salt
- ¼ tsp ground black pepper
- 2 Tbsp water
- 3 Tbsp oil
Directions
- Preheat oven to 200°F.
- Combine flour, cumin, salt, and pepper.
- Add water and knead to form a dough.
- Divide dough into eight balls. On a floured surface, roll dough balls into thin rounds.
- Place rounds on baking trays. Bake for 60 minutes.
- Heat oil over medium-high heat.
- Fry papadums one at a time. Flip with tongs to lightly brown both sides.
- Serve with chutney for an appetizer, or as is for a snack.
