This simple combination of pickle, cream cheese and ham or dried beef slices goes by various names in the Midwest, including pickle wrap, holiday pickle wrap and Iowa sushi. The origin of these bite-sized appetizers is unknown but one Iowan culinary historian believes the recipe originated with German settlers, the largest ethnic group in the state. Germans, of course, are fond of pickles and red meat. Variations abound, including using tortillas to wrap around the pickle and cream cheese or substituting a green onion for the pickle.

Ingredients
8 dill pickle spears
2.5 oz of thin-sliced ham or dried beef
2 packages (8 oz each) cream cheese, softened
Directions
- Place the pickle spears on a plate and pat dry. Set aside.
- Place the ham or beef slices on a serving plate and pat dry.
- Spread cream cheese on each slice of meat.
- Place a pickle spear at the end of each slice and roll into cylinders.
- Chill in refrigerator until ready to serve.
