Curing fish and other meats with salt is an ancient practice. The salt-cured salmon dish called gravlox or gravlaks is popular in Scandinavia and dates to the Middle Ages. Fisherman cured fresh salmon in salt and buried it in the sand above the high tide line. Salmon is full of protein, omega-3 fatty acids, and Vitamin D. One variant is to add dill while curing.

Directions
- Slice the salmon fillet horizontally into two layers, each less than ½-inch thick.
- Place salmon in a glass dish with a lid.
- Combine the salt and sugar and then rub it into the fish on all sides.
- Cover the dish and refrigerate for four days.
- Slice thin and serve.
