Buns

Buns are soft, individual-size bread with a round top and flat bottom made from leavened dough. Commonly sliced in half horizontally, buns are used for sandwiches such as hamburgers or sliders. They are typically round, but an elongated version is used for hot dogs. Buns can be made plain, sweet, or savory. Hot cross buns are an example of a sweet version. Some savory bun recipes include toppings such as sesame seeds, salt, dried minced onion, dried minced garlic, and poppy seeds.

Ingredients

  • ½ cup milk
  • 6 Tbsp butter, divided
  • Warm water, as needed
  • ½ cup sugar
  • 1 large egg
  • 1 tsp salt
  • 2 packets (¼ oz each) active dry yeast
  • 5–5½ cups bread flour, divided
  • Nonstick cooking spray, as needed to grease pans

Directions

  1. Combine milk and 4 tablespoons butter in a 2-cup glass measuring cup and microwave for 1½ minutes. Add enough warm water to bring the mixture to measure 2 cups.
  2. Combine sugar, egg, and salt in large bowl and mix well.
  3. Add the milk mixture and stir to combine.
  4. Stir in yeast and let mixture rest 2 minutes.
  5. Add 3 cups of flour and beat using an electric mixer on medium speed. Scraping down the sides, beat until mixture is smooth and elastic.
  6. Add 2 cups of flour and stir until smooth. Add additional flour if needed to make the dough easy to handle.
  7. Melt the remaining 2 tablespoons of butter and use some of it to brush the top of the dough. Reserve the remaining melted butter.
  8. Place the dough in a greased bowl and cover it. Let rest for 45 minutes or until doubled in size. Dough is ready when an indentation remains after it is poked.
  9. Preheat oven to 375°F and grease two 15 x 10-inch baking pans using nonstick cooking spray.
  10. Punch down the dough and divide it in half. On a floured surface, shape each half into 12 equal-sized balls.
  11. Place buns in prepared baking pans and brush tops with melted butter.
  12. Cover buns and let rest about 60 minutes or until they have doubled in size.
  13. Bake for 14–16 minutes or until golden-brown. Remove the pans from the oven and remove the buns from the pans.
  14. Brush buns with melted butter, if desired, and serve warm.
