Gougères

Gougères are savory French pastries made from a light dough mixed with cheese. They originate in the region of Burgundy near Tonnerre. The bite-sized breads are typically made with Gruyère, Comté, or Emmentaler cheese. They are often served at wine tastings. As an appetizer, gougères are most often made as separate small pastries. They can, however, be made in a ring or pie tin. Ingredients including mushrooms, beef, or ham are sometimes added to create a more substantial dish.

Ingredients

  • ½ cup water
  • ½ cup milk
  • 4 oz unsalted butter, cut into tablespoons
  • Large pinch of coarse salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 1 cup  Gruyère cheese plus more for topping, shredded and divided
  • Freshly ground black pepper, to taste
  • Freshly grated nutmeg, to taste

Directions

  1. Preheat oven to 400°F. Line two baking sheets with parchment.
  2. In a medium saucepan, add water, milk, butter, and salt, stirring to combine. Bring to a boil.
  3. Add the flour and stir with a wooden spoon until a smooth dough forms.
  4. Continue to stir over low heat until the dough becomes dry and pulls away from the pan, about 2 minutes.
  5. Transfer the dough into a bowl.
  6. Let cool for 1 minute, then beat in the eggs, one at a time, beating thoroughly after each addition.
  7. Add 1 cup cheese, pepper, and nutmeg.
  8. Transfer the dough to a pastry bag fitted with a ½-inch round tip.
  9. Pipe 1 tablespoon-sized mounds on the baking sheets, spacing 2 inches apart.
  10. Sprinkle with cheese and bake for 22 minutes, until puffed and golden-brown.
