Pandesal, also known as the “bread of salt,” is the most well-known and widespread Filipino bread. In the Philippines, pandesal is available from bakeries, roadside stalls, and bicycle vendors. The recipe was brought to America by immigrants, where it is commonly made in American Filipino households. Pandesal may be eaten at any time of day, but it is most popular at breakfast topped with butter or jam. Pandesal also can be stuffed with pimiento cheese or liver spread.

Ingredients
- 2¼ tsp active dry yeast
- 1¼ cup warm whole milk
- ⅓ cup sugar, divided
- 1½ cups bread flour
- 3 cups all-purpose flour
- 1½ tsp fine sea salt
- 3 Tbsp unsalted butter, at room temperature
- 2 large eggs, lightly beaten
- Nonstick cooking spray, as needed to grease bowl
- dry breadcrumbs, as needed to top balls of dough
Directions
- Combine the yeast and warm milk in a small bowl, stirring to dissolve the yeast.
- Stir in 2 tablespoons of sugar and let rest for 5–10 minutes, until mixture becomes foamy.
- Whisk together the bread flour, all-purpose flour, and salt in a large mixing bowl. Set aside.
- Pour the yeast mixture into a stand-mixer bowl and add the remaining sugar, butter, and eggs.
- Attach hook attachment to mixer. With mixer on low, slowly add flour mixture to bowl. Increase speed to medium once all the flour has been added. Continue kneading until dough forms a smooth ball.
- Grease a bowl using nonstick cooking spray, place the dough in it, cover, and let rest for 60 minutes.
- Turn out dough, divide into 24 equal parts, and roll each into a ball.
- Coat the top of each ball in breadcrumbs and place them on a parchment-lined baking sheet, breadcrumb side up.
- Preheat the oven to 350°F.
- Cover dough with plastic wrap and allow to rise for an additional 15–25 minutes, until rolls have become puffy.
- Bake rolls for 20–25 minutes, until golden-brown.
- Remove the rolls from the oven and serve warm or at room temperature with desired toppings such as butter, jam, or cheese.
