Pizza dough is Italian in origin and perhaps the most important part of a good pizza. Made with wheat flour and yeast, sugar is sometimes added to help the yeast rise and enhance browning of the crust. Classic pizza dough is plain but may be seasoned with butter, garlic, and herbs, or stuffed with cheese. Different styles of pizza such as thin crust, thick crust, focaccia, wood-fired crust, and flatbread crust use different dough.

- Whisk together water, sugar, and yeast in small bowl. Let sit about 10 minutes. If the yeast is good, it will start to froth.
- Combine flour, salt, olive oil, and yeast mixture in large bowl. Mix ingredients together for about 5 minutes or until dough is soft and elastic. When it’s ready the dough will come clean from the side of the bowl.
- Shape dough into two equal balls and place them each in an oiled bowl.
- Rub oil over the dough and cover the bowls with plastic wrap.
- Chill the dough in the refrigerator until ready to use or put it in an airtight plastic bag and freeze it for up to 3 months.
