Popovers

Popovers—named for how the batter swells or pops over the top of the tin while baking—are light, hollow rolls with a crispy exterior. Made from an egg batter, popovers are believed to be the American version of England’s Yorkshire pudding. The first cookbook recipe for popovers appeared in 1876. Popovers are mainly savory with a buttery taste. Using meat drippings to grease the tin or adding garlic and herbs increases flavor. There are sweet versions of popovers as well, served topped with fruit and whipped cream.

  1. Preheat oven to 425°F.
  2. Drizzle about a teaspoon of melted butter into each cup of a 12-cup popover tin and place in the oven while it preheats. A muffin tin can be substituted for a popover tin; however due to the smaller size, this recipe will make more than 12.
  3. Combine milk, eggs, salt, cheese (if using), and remaining 5 tablespoons of melted butter in a blender and blend until smooth.
  4. Add flour to blender and blend until well combined.
  5. Remove the popover tin from oven and fill each cup about two-thirds full.
  6. Bake for 20 minutes before reducing heat to 350°F and baking an additional 10 minutes or until popovers are puffy and browned. Don’t open the oven until they are done.
  7. Remove the tin from oven, turn out the popovers immediately, and serve hot.
