Soda bread—arán sóide in Irish—can be any number of varieties of bread that use baking soda for leavening rather than the traditionally-used yeast. Soda breads are made in different ways, with some recipes replacing the buttermilk with live-culture yogurt or even stout. Also, ingredients like raisins and other dried fruits can be added.

Ingredients
- 4 cups all-purpose flour, plus a bit extra to dust pan and work surface
- 1 tsp baking soda
- 1 tsp salt
- 14 oz buttermilk
Directions
- Preheat the oven to 425°F.
- Grease a 9-inch round cake pan using nonstick cooking spray and dust with a bit of flour.
- Combine the flour, baking soda, and salt and pour through a sieve into a large bowl.
- Add buttermilk and mix to form a sticky dough.
- Place dough on a floured surface and lightly knead.
- Transfer to the cake pan and mark a cross on the top.
- Cover the pan, and bake for 30 minutes.
- Remove cover, and bake for 15 minutes.
- Transfer the bread to a cooling rack, and cover it with a damp tea towel to keep moist.
