Apple Dumplings

Fruit dumplings were popular in European countries in the middle of the 20th century. When colonists came to the America, the recipe for fruit dumplings followed. The colonists had to use the fruit that was available, which popularly became apples. In apple dumplings, pastry is wrapped around a peeled and cored apple and sealed with a twist on the top. The dumpling is then baked to a golden brown in a buttery sauce.

Ingredients

Dough:
  • 1½ cups flour, plus extra to dust pan
  • 1 tsp salt, fine
  • 7 Tbsp butter, chilled
  • ¼ cup water, ice cold
Filling:
  • 4 small granny smith apples, peeled and cored
  • ½ cup sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • 2 Tbsp butter, plus extra for greasing pan

Directions

  1. Dough:
  2. Mix together the flour and salt in a large bowl.
  3. Add the butter. Rub and pinch the butter into the flour using your fingers. Lightly work together the butter and flour. Combine for a few short minutes, until the butter is all coated in flour and the mixture is chunky.
  4. Create a well in the center of the mixture and add the water. Again, quickly mix together with your hands.
  5. The dough should be combined but crumbly. Form dough into a ball, and then press it into a thick disc. Wrap the disc in plastic wrap and chill in the refrigerator for 2 hours.
  6. Remove the plastic wrap from dough. On a floured surface using a floured rolling pin, roll the dough disc into an even sheet, ⅛ inch thick. Divide it into four sections.
  7. Filling:
  8. Preheat the oven to 350°F. Butter a large, deep baking dish.
  9. Place an apple on each piece of pastry.
  10. Mix together the sugar, cinnamon, and salt. Divide it into four parts and sprinkle it into the apples. Place a small piece of butter in each apple.
  11. Wrap the pastry over the apple and seal it with a twist on the top. Lightly prick pastry with a fork to allow steam to escape.
  12. Place the dumplings in the buttered dish.
  13. Bake 30 minutes.
  14. Serve warm with ice cream, if desired.
