This dessert is New Hampshire’s version of apple cobbler. A recipe for the dish was discovered among the pages of a very old New Hampshire cookbook. These days, apple pandowdy is a popular dessert all over America, but particularly in New England. Traditional spices that make apples shine include cinnamon and nutmeg, all of which deliver a classic, comforting apple dessert.

Ingredients
- 1 cup packed brown sugar
- 1¼ cups all purpose flour, divided
- ½ tsp salt, divided
- 1 cup water
- 1 tsp lemon juice
- 2 tsp baking powder
- 5 Tbsp butter, divided
- ¾ cup milk
- 5 cups sliced peeled apples
- ½ tsp plus ⅛ tsp ground cinnamon, divided
- ½ tsp ground nutmeg
- 1 tsp vanilla extract
- 1 Tbsp sugar
Directions
- Preheat oven to 350°F.
- Add brown sugar, ¼ cup of flour, ¼ teaspoon of salt, water, and lemon juice to a saucepan, and cook over a medium heat until thickened. Cover and set aside.
- Combine baking powder with remaining flour and salt in a mixing bowl.
- Blend in 3 tablespoons of butter.
- Add the milk and stir until moistened. Mixture will be lumpy. Set aside.
- Arrange apples in a baking dish and sprinkle them with ½ teaspoon of cinnamon.
- Combine nutmeg, vanilla, and remaining butter with the sauce, and pour it over the apples.
- Drop spoonfuls of dough over the sauce covering the apples.
- Combine remaining cinnamon and sugar. Sprinkle over the dough.
- Bake for about 55 minutes, or until top is browned and apples are tender.
- Serve warm.
