Apple Pandowdy

This dessert is New Hampshire’s version of apple cobbler. A recipe for the dish was discovered among the pages of a very old New Hampshire cookbook. These days, apple pandowdy is a popular dessert all over America, but particularly in New England. Traditional spices that make apples shine include cinnamon and nutmeg, all of which deliver a classic, comforting apple dessert.

  1. Preheat oven to 350°F.
  2. Add brown sugar, ¼ cup of flour, ¼ teaspoon of salt, water, and lemon juice to a saucepan, and cook over a medium heat until thickened. Cover and set aside.
  3. Combine baking powder with remaining flour and salt in a mixing bowl.
  4. Blend in 3 tablespoons of butter.
  5. Add the milk and stir until moistened. Mixture will be lumpy. Set aside.
  6. Arrange apples in a baking dish and sprinkle them with ½ teaspoon of cinnamon.
  7. Combine nutmeg, vanilla, and remaining butter with the sauce, and pour it over the apples. 
  8. Drop spoonfuls of dough over the sauce covering the apples.
  9. Combine remaining cinnamon and sugar. Sprinkle over the dough.
  10. Bake for about 55 minutes, or until top is browned and apples are tender.
  11. Serve warm.
