Apple Pie

Apple pie is often thought of as a traditional American dessert, but the only apple species native to North America is the crab apple. It wasn't until the 17th century that other more palatable varieties began being introduced. Apple pie recipes were brought to the New World by British, Dutch, and Swedish colonists during the 17th and 18th centuries. Two recipes for the dessert were included in the 1796 cookbook called American Cookery by Amelia Simmons. Over the years apple pie has become a classic dish in America that is especially popular during the fall when apples are harvested and during the holidays.

Ingredients

    Crust:
    • 2 cups all-purpose flour
    • 1 tsp salt
    • 1 Tbsp sugar
    • 6 Tbsp butter
    • 6 Tbsp vegetable shortening
    • 8 Tbsp water, ice cold
    Filling:

    Directions

      For Crust:
    1. Combine the flour, salt, and sugar in a bowl.
    2. Cut the butter and shortening into the flour mixture until it resembles coarse crumbs.
    3. Gradually add the ice water, stirring just to combine after each addition. Stop adding water as soon as dough starts to hold together.
    4. Divide the dough into two parts, cover with plastic wrap, and chill in the refrigerator for at least 60 minutes. 
    5. For Filling:
    6. Combine the sugar, flour, cinnamon, nutmeg, and salt in a bowl.
    7. Add the apples and mix until they are coated in the sugar mixture.
    8. For Assembly:
    9. Preheat the oven to 400°F.
    10. Roll out half the dough in an even circle a 1/16-inch thick.
    11. Line a 9-inch pie pan with the dough.
    12. Pile the apples onto the dough. Dot with butter.
    13. Roll out the remaining pastry dough and cover the apples.
    14. Crimp the edges of the pastry together using a fork.
    15. Cut a few slits in the top crust to allow steam to escape.
    16. Bake for 60 minutes, or until apples are completely tender.
    17. Serve warm or cold, plain, and with vanilla ice cream and/or whipped cream,  if desired.
