Bingsu

Bingsu, or more commonly patbingsu, is a Korean dessert made of shaved ice and sweet toppings such as sweetened adzuki beans. A shaved ice dessert is found in records dating back as far as 1392, however the distinctive red bean paste was introduced to Korea under Japanese rule in 1910, and the variety of toppings now found were introduced during the Korean War. Now the dessert can be found all over Korea and in American K-towns in the summertime. It is served in fast food restaurants, cafes, and bakeries, and can be made at home with an electric ice shaver, or alternatively a blender or food processor with an ice crushing setting.

Ingredients

    For the Adzuki Beans:
    For the Rice Cakes:
    For the Bingsu:
    • 4 cups shaved ice
    • Toppings, such as fruits, candies, ice creams, condensed milk 

    Directions

      To Make the Adzuki Beans:
    1. Rinse beans and put in a large pot. Add 4 cups of water and bring to a boil.
    2. Reduce heat and allow to boil another 5 minutes. Drain the beans and return to pot with 4 cups of fresh water. Cover, and cook over low heat for 40 minutes. 
    3. Add 2 cups of water, cover, and continue to simmer 35 minutes. Stir occasionally to make sure nothing is sticking.
    4. Stir in the salt, sugar, and honey. Simmer, uncovered, another 30 minutes. Transfer to another container to cool.
    5. To Make the Rice Cakes:
    6. Combine rice powder, sugar, and salt. Mix with a whisk.
    7. Add water and stir to combine. Cover with ceramic wrap and microwave for 2 minutes. Rotate and microwave another 30 seconds. Remove from microwave and let sit 5 minutes.
    8. Dust a cutting board with cornstarch. Place rice cake dough on cutting board and shape into a rectangle.  Cut lengthwise into ¾-inch strips. Cut each strip into ¾-inch cubes.
    9. To Assemble:
    10. Shave the ice and place into small deep bowls. Drizzle adzuki beans over the ice, and adorn with the rice cakes and your favorite toppings.
