Chocolate Cake

Americans consume nearly 20 percent of the world’s chocolate. While most chocolate is sold as candy, chocolate cake is a true American classic. Cowboys in the Old West would bake flourless cakes over their campfires. Today, cakes have been influenced by generations of immigration, and a seemingly endless myriad of cake flavors and styles have become popular. Layer cakes are especially common at celebrations like birthdays and weddings. Layers of moist cake are stacked high, held together by smears of frosting. Eventually, the whole cake is wrapped in frosting and decorated to the baker’s liking.

Directions

  1. Preheat oven to 350°F. Grease and flour two 9-inch pans.
  2. Sift flour with baking powder and salt.
  3. Cream butter with sugar to a light fluff.
  4. Beat in eggs individually until again fluffy.
  5. Beat in melted chocolate and vanilla.
  6. Beat in flour gradually, alternating with milk.
  7. Fill each of the two pans halfway.
  8. Bake 30–40 minutes. A wooden skewer inserted into the center should emerge clean.
  9. Cool on a wire rack.
  10. Carefully remove cakes from their pans and divide them into even layers.
  11. For Assembly:
  12. Spread frosting generously over the top of the base layer and then stack the other layer of cake on top.
  13. Frost the top and sides of the cake.
