Coca-Cola Cake

During the days of World War II, sugar and other food items were rationed and difficult to find, leading many cooks to improvise with alternate ingredients. The Coca-Cola Company held the contract to supply US troops with its beverages, and it was exempt from government-imposed sugar rationing. This allowed its products to be made with sugar while competitors were forced to find substitutes. Therefore, Coca-Cola was promoted as an alternative to sugar and so became part of recipes for items such as ham glazes, barbecue sauces, and more.

Directions

    For Cake:
  1. Preheat the oven to 350°F and grease a 9 x 13-inch baking pan.
  2. Whisk together the flour, sugar, baking soda, salt, and cinnamon in a large bowl.
  3. Combine the cola, butter, and baking cocoa in a small saucepan and bring it to a boil, stirring occasionally.
  4. Add the butter mixture to the dry ingredients, stirring just until moistened.
  5. Whisk together the eggs, buttermilk, and vanilla in a small bowl until blended.
  6. Add the wet ingredients to the batter, whisking until well combined.
  7. Pour the batter evenly into the prepared pan and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  8. For Glaze:
  9. Bring the cola to a boil in small saucepan and cook it for about 12–15 minutes or until it is reduced to about a ½ cup.
  10. Stir the butter and baking cocoa into the cola until the butter is melted and then remove the mixture from the heat.
  11. Add the powdered sugar to the saucepan, stirring until smooth.
  12. Pour the glaze immediately over the hot cake, and then let it to cool completely before cutting.
