Guava Cake

The guava plant, which has been cultivated in tropical regions of the United States, is native to Mexico, the Caribbean, Central America, and northern South America. The guava fruit produced by the trees is sweet and juicy. It is commonly eaten raw or used to make preserves, sauces, and desserts. Guava cake is a popular dessert in the Hawaiian Islands, where it is said to have been invented by Herbert Matsuba, owner of Dee Lite Bakery, in the early 1960s. Matsuba wanted to incorporate Hawaiian flavors into a new baked dessert as a way to promote his bakery.

Ingredients

    Cake:
    • Nonstick cooking spray, as need to grease pan
    • 1 package (15–16 oz) strawberry cake mix
    • 1⅓ cups guava juice
    • 3 eggs
    • ⅓ cup oil
    Cream Cheese Frosting:
    Guava Topping:

    Directions

    1. Cake:
    2. Preheat the oven to 350°F and grease a 9 x 13-inch baking pan with nonstick cooking spray.
    3. Combine the cake mix, guava juice, eggs, and oil in a large bowl using an electric mixer.
    4. Pour the batter into the prepared pan and bake according to the directions on the cake mix box.
    5. Remove the cake from the oven and let it cool completely.
    6. Cream Cheese Frosting:
    7. Beat the cream cheese in a medium bowl using an electric mixer until fluffy.
    8. Add the sugar and vanilla, beating until combined.
    9. Fold in the Cool Whip and then chill in the refrigerator until ready to use.
    10. Guava Topping:
    11. Mix together the cornstarch and water in small bowl.
    12. Combine the guava juice and sugar in a medium saucepan. Bring it to a boil and then remove it from the heat.
    13. Add the cornstarch mixture to the hot guava juice, stirring until well combined.
    14. Return the mixture to the heat and bring it back to a boil. Boil for 1 minute, stirring constantly.
    15. Remove the mixture from the heat and chill it in the refrigerator until cool.
    16. Assembly:
    17. Spread the cream cheese frosting evenly over the top of the cooled cake, using all of it.
    18. Pour the guava topping over the cream cheese frosting and spread it evenly being careful not to mix it into the frosting.
    19. Chill the cake in the refrigerator until ready to serve.
