Dabo kolo (barley breads) are small fritters sold by Ethiopian street vendors. Made from barley flour, they make popular snacks. This dessert adaptation of dabo kolo using ayib, a fresh cheese from Ethiopia similar to spiced cottage cheese, drizzled with honey is perfect with rich Ethiopian coffee.

- Lightly whisk cheese. Add eggs individually, whisking after each addition.
- Whisk in flour, baking soda, salt, ghee, and orange zest.
- Cover and let rest for 60 minutes.
- In a medium skillet, heat oil over medium heat.
- Drop spoonfuls of batter into pan, frying to a light gold. Drain on paper towels.
- Drizzle with warm honey and serve.
