Hot milk cake is a traditional Southern dessert that originated in America during the Great Depression. Similar to a classic vanilla cake, hot milk cake is made from simple ingredients that are commonly on-hand. It has a moist, fluffy texture and buttery flavor with a hint of vanilla. Although delicious on its own, hot milk cake can be topped with fruit and whipped cream.

Ingredients
- Nonstick cooking spray, as needed to grease pan
- 4 large eggs
- 2 cups sugar
- 1 tsp vanilla extract
- 2¼ cups all-purpose flour
- 2¼ tsp baking powder
- 1¼ cups milk
- 10 Tbsp butter, cubed
- Powdered sugar, as needed for topping
Directions
- Preheat the oven to 350°F and grease a 13 x 9-inch baking dish using nonstick cooking spray.
- Place the eggs in a large bowl and beat them for at least 5 minutes using an electric mixer on high speed.
- Add the sugar gradually, beating until light and fluffy.
- Beat in the vanilla.
- Whisk together the flour and baking powder in a small bowl and gradually add it to the batter, beating on low speed until smooth.
- Combine the milk and butter in a small saucepan and heat it just until the butter melts.
- Add the milk mixture to the batter gradually, beating just until combined.
- Pour the batter into the prepared dish and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven, sprinkle it with powdered sugar, and set it on a wire rack to cool.
