Key lime pie is a mildly tart and sweet favorite, derived from a special breed of lime grown in the Florida Keys. The Key lime is smaller with a thinner skin than the common Persian lime found throughout American grocery stores. Although different types of limes are interchangeable in most recipes, Key limes are known for their superior flavor. They also go by the names Mexican or West Indian limes.

Ingredients
- 6 egg yolks
- 2 cans (14 oz each) sweetened condensed milk
- 1 cup Key lime juice
- 1 Tbsp Key lime zest
- 1 refrigerated graham cracker pie crust (9-inch)
- 2–3 cups whipped cream, for topping
Directions
- Beat egg yolks in a mixing bowl until thickened, about 3 minutes.
- Add condensed milk, lime juice, and lime zest. Beat for about 1 minute until well blended.
- Pour mixture into pie shell, filling it to the brim and slightly mounded.
- Cover pie with plastic wrap, stretching it tightly across the surface of the pie.
- Freeze for about 3 hours, or until firm.
- Remove from freezer and let sit 5 minutes until ready to serve.
- Top each serving with whipped cream.
