Originating in the late 15th century at the House of Savoy to mark a visit by the King of France, these sponge cakes became recognized as an official court biscuit. Introduced to America by early French settlers, ladyfingers also are known by their original Italian name, savoiardi. The biscuits became known as ladyfingers because their shape resembles the finger of a woman. Ladyfingers are featured in many French and Italian dessert recipes such as tiramisu.

Ingredients
- Nonstick cooking spray, as needed to grease baking sheets
- 3 large eggs, separated
- 9 Tbsp sugar, divided
- 1 tsp vanilla extract
- 1 Tbsp lemon juice
- Pinch of salt
- ⅔ cup pastry flour
- ¼ cup powdered sugar
Directions
- Preheat oven to 350°F. Lightly grease two baking sheets using nonstick cooking spray.
- Beat the egg yolks, 6 tablespoons of sugar, vanilla, lemon juice, and salt until most of the sugar dissolves. Set the mixture aside.
- Beat the egg whites in a small bowl until soft peaks form. Add the remaining sugar one tablespoon at a time while beating until stiff peaks form.
- Fold half of the flour into the egg yolk mixture.
- Fold the egg whites into the yolk mixture and then add the remaining flour, stirring gently to combine.
- Pour the batter into a pastry bag fitted with a ½ inch round tip.
- Pipe the batter about 1 inch wide and 4 inches long onto baking sheets leaving about an inch of space between.
- Bake for 15 minutes or until a light gold color. Do not let the ladyfingers brown.
- Remove the cookies from the oven and immediately transfer them to a wire rack to cool.
