Marshmallow Jell-O Pinwheels

These fun and visually appealing treats are a hit with kids. Easy to make, only a few ingredients are needed. Use a favorite flavor gelatin and consider making several colors. This dessert or snack is great any time of year and welcome for any occasion—especially children’s parties.

Ingredients

  • Nonstick cooking spray, to coat dish
  • 1 package (3 oz) flavored gelatin
  • ½ cup water
  • 1½ cup mini marshmallows

Directions

  1. Lightly spray 8-inch square glass baking dish with nonstick spray. Wipe off excess.
  2. Whisk together water and gelatin in microwave-safe bowl.
  3. Microwave 1 minute.
  4. Whisk contents well and then add marshmallows. Stir.
  5. Microwave for 30 seconds and stir until marshmallows are dissolved. If they do not completely dissolve, microwave another 15 seconds.
  6. Pour contents into prepared dish and refrigerate 30–45 minutes.
  7. Use a butter knife to loosen around edges. Roll up and place seam side down on cutting board.
  8. Use dental floss or twine to cut into slices by sliding under roll, wrapping over top and pulling ends.
  9. Refrigerate slices until ready to serve.
