Modjeskas are caramel and marshmallow candies invented in Louisville, Kentucky. It was the 1880s when confectioner Anton Busath created the treat, named in honor of the Polish-born Shakespearean actress, Helena Modjeska, who performed in Louisville several times over the course of the decade. Today, modjeskas are still made in Kentucky according to the original recipe.

Ingredients
- 2 cups white sugar
- ¾ cup light corn syrup
- ½ cup butter
- 2 cups heavy whipping cream, divided
- 1 bag (10 oz) large marshmallows
Directions
- Prepare the marshmallows, slicing each in half lengthwise. Set aside in a bowl.
- Butter a marble slab or counter.
- In a heavy pot, bring the sugar, syrup, butter, and 1 cup of cream to a boil over medium low heat, stirring constantly.
- Cook until the mixture reads 234°F on a candy thermometer, or forms a soft ball in cold water.
- Remove from heat and pour over the marble slab or counter.
- Beginning at the edges of the poured sheet, cut or pull off pieces of the caramel to wrap around the marshmallow pieces until all are used.
- Wrap candies in a waxed paper square, twisting the ends to seal.
