This dense, moist cake is simple and delicious. Nigerian Americans serve it as an everyday dessert or snack, as well as at special occasions such as birthdays, weddings, and community events. Variations include adding a handful of dried fruit such as raisins or dried cherries. Other variations include brandy or rum. Some recipes, such as this one, finish the cake with a dusting of powdered sugar.

Ingredients
- Nonstick cooking spray, as needed
- 3 cups all-purpose flour, plus extra for dusting
- 5 tsp baking powder
- ½ tsp salt
- 1½ cups butter, room temperature
- 1½ cups sugar
- 6 large eggs, beaten
- 1 tsp vanilla extract
- Powdered sugar, as needed for garnish
Directions
- Preheat the oven to 350°F.
- Coat the bottom of a round 10-inch cake pan with nonstick cooking spray and then dust with flour.
- In a medium bowl, sift together the flour, baking powder, and salt.
- In a large bowl, cream the butter and sugar together.
- Add the eggs and vanilla extract, and mix well.
- Gradually add the dry mixture to the wet mixture, stirring after each addition. Do not overmix.
- Pour the batter evenly into the cake pan.
- Bake for 50 minutes, or until a toothpick inserted in the center comes out clean.
- Remove the cake from the oven and allow it to cool in the pan.
- When considerably cooler, transfer the cake to a wire rack to cool completely.
- Before serving, dust the cake with powdered sugar.
