This recipe was created at the Festival of the Arts in Oklahoma City and is now a popular dish the signifies the event. It features Oklahoma’s state fruit, the strawberry. Strawberries Newport is a sweet and creamy dessert using puff pastry and vanilla pudding and is best made with in-season strawberries. Variations use other fruits, such as raspberries, blackberries, or blueberries.

Ingredients
Pastry:
- 1 package store-bought frozen puff pastry
Custard:
- 1½ cups milk
- ½ cup sugar
- ¼ cup all purpose flour
- 3 eggs
- 1 tsp vanilla extract
- ⅛ tsp almond extract
Topping:
- 4 cups fresh strawberries
- ⅓ cup brown sugar
- 2 cups whipping cream
- ½ cup sugar
- 2 Tbsp vanilla extract
Directions
- Thaw pastry.
- Preheat oven to 500°F.
- Roll and/or cut pastry into desired shapes and put in oven for 5 minutes.
- Reduce heat to 375°F and continue baking for another 25–30 minutes.
- Scald milk in a pan. Do not boil.
- Mix sugar, flour, and well beaten eggs over boiling water in a double boiler.
- Add scalded milk gradually to the egg mixture and stir until well blended.
- Continue cooking until mixture starts to thicken, stirring regularly.
- Remove from heat and continue stirring while adding the vanilla and almond extracts. Let cool.
- Remove tops from berries and cut them in half.
- Combine berries with brown sugar and set aside.
- Whip the cream, sugar, and vanilla with a mixer or a whisk until cream forms stiff peaks.
- Remove the top half of the individual baked puff pastry forms.
- Fill pastry with about ¼ cup of the custard, followed by some strawberries.
- Replace top of pastry.
- Top with whipped cream and serve.
