Strawberry soup is a light, cool refreshing snack for hot days almost anywhere. Yet Delaware serves this dish more often than most US states; after all, the strawberry is Delaware's official state fruit. Delawareans take tremendous pride in their strawberry harvests and incorporate the fruit into numerous tasty recipes.

Ingredients
- 4 cups strawberries, washed and hulled
- 1 cup half and half
- 1 cup sour cream
- ⅓ cup sugar
- 2 Tbsp fresh lemon juice
Directions
- Puree the strawberries in a blender and pour into a large bowl.
- Add half and half, sour cream, sugar, and lemon juice, and stir until well blended.
- Refrigerate for 1 hour.
- Garnish with mint leaves and serve.
Notes
Optional:
Freeze the recipe and serve it in cups with an ice cream scoop.
Substitute vanilla yogurt for the sour cream.
