Nordic pancakes are more like thin crepes. Called pannkakor, they’re typically served as a dessert in Sweden and Norway, with a wide variety of toppings including fruit jam and whipped cream. They may also include fillings like shrimp and cheese. These pancakes date to the Middle Ages in Sweden and are mentioned in writings from the 14th century. This recipe is easy to make and should always be fried in butter for an authentic flavor. In the US, these pancakes are popular with Scandinavian descendants.

  1. In a bowl, beat eggs with an electric mixer for 3–5 minutes, until thick and lemon-colored.
  2. Add the milk and stir to combine.
  3. In a medium bowl, sift together flour, sugar, and salt.
  4. Add flour mixture to egg mixture, mixing until the texture is smooth.
  5. Heat a pan over medium heat and grease with butter.
  6. Working by tablespoonfuls and avoiding crowding, drop the batter on the hot pan and spread into thin pancakes.
  7. Cook for 2–4 minutes, flipping halfway through, until both sides are lightly browned.
  8. Repeat until all the batter is used.
  9. Serve with toppings of choice.
