Based on traditional Italian antipasto, this recipe takes the traditional first course platter of assorted ingredients and serves them over lettuce. Ingredients also can include roasted red bell peppers, provolone or other hard cheeses, and pickled vegetables. Olives should be briny and high quality, like kalamata or other Greek olives. With its appealing mixture of cheese, meats, and vegetables, this salad also could serve as a main dish.

Ingredients
Dressing:
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 1 tsp Dijon mustard
- ½ tsp oregano
- ½ tsp salt
- ⅛ tsp ground black pepper
Salad:
- 2 large romaine hearts, chopped
- ½ lb salami
- 1 cup mozzarella balls, halved
- 1 cup quartered artichoke hearts
- 1 cup cherry tomatoes, halved
- 1 cup chopped pepperoncini
- ½ cup green or black olives
Directions
- Combine the dressing ingredients in a lidded jar.
- Shake vigorously.
- Toss together the romaine, salami, mozzarella, artichoke hearts, tomatoes, pepperoncini, and olives in a large bowl.
- Top salad with dressing and serve.
