A flavorful and hearty dish, beef tips in rich mushroom gravy provides a satisfying meal. Gravies and sauces served over food dates to 200 CE and the Romans. They were originally used to disguise the unpleasant taste of food that wasn’t fresh. Today, gravies and other sauces enhance foods with their flavorful ingredients that impart a rich and savory taste. Beef tips can be made from stew meat or high-quality tenderloin cut into bite-size pieces, as in this recipe. Serve over rice, egg noodles, or mashed potatoes for a classic meal.

Ingredients
- 3 Tbsp butter
- ½ lb cremini mushrooms, sliced
- ½ cup onion, finely chopped
- 2 large garlic cloves, minced
- ½ cup all-purpose flour, divided
- ¼ tsp salt, more as needed to taste
- ¼ tsp freshly ground pepper, more as needed to taste
- 1 lb beef tenderloin, cut into bite-size pieces
- 2 Tbsp olive oil
- ¼ cup red wine
- 1 can (14 oz) beef broth, divided
- 2 Tbsp Worcestershire sauce
Directions
- Melt butter in a large pan set over medium-high heat.
- Add mushrooms and cook until lightly golden-brown, about 8 minutes.
- Add onions and cook 2–3 minutes or until softened.
- Reduce heat to low and add garlic, cooking 30 seconds.
- Remove pan from heat and transfer mixture to a plate.
- Combine ¼ cup flour, salt, and pepper in a large sealable plastic bag, shaking to mix. Add chunks of meat and shake to coat.
- Combine olive oil and beef in pan, set it over medium heat, and cook until browned. Transfer browned meat to the plate with mushroom-onion mixture.
- Add red wine to pan and deglaze, scraping brown bits from bottom.
- Pour ½ cup beef broth into a small bowl and set aside.
- Add remaining beef broth and Worcestershire sauce to pan and simmer 5 minutes, stirring a couple times.
- Whisk remaining ¼ cup flour into beef broth in small bowl.
- Add flour-broth mixture to pan and whisk, cooking until slightly thickened, about 2 minutes.
- Transfer mushroom-onion mixture and beef chunks back into pan. Simmer 15 minutes.
- Season with salt and pepper to taste and serve immediately over rice, egg noodles, or mashed potatoes.
