Sautéed cubed beef is a popular dish in Vietnam, though it is customarily served only at formal events such as weddings because of the history of beef being a luxury ingredient in Vietnam. The dish gets its name from the shape of the beef, which is cut into cubes the size of playing dice (hột lúc lắc) before being cooked.

Ingredients
- 2 lbs beef, cubed
- ¼ cup peanut oil, divided
- 2 scallions, minced
- 6 garlic cloves, minced
- 2 Tbsp rice wine
- 2 Tbsp soy sauce
- 1 tsp ground black pepper
- 2 Tbsp sugar
- 1 bunch watercress, mixed field greens, or lettuce
Directions
- Combine half the oil with all other ingredients except watercress.
- Marinate, refrigerated, for at least 60 minutes, preferably overnight.
- Heat remaining oil in a wok or frying pan.
- Add marinated meat and spread into a single layer.
- Cook without stirring until underside is browned.
- Shake to loosen meat, and turn.
- Continue to cook, allowing each side to brown without stirring.
- Serve hot with watercress or lettuce.
