The American bison of the Great Plains were once the center of many Native American cultures, including the Sioux. Many traditional Sioux recipes use bison, also called buffalo, though modern recipes incorporate contemporary foods. This recipe includes canned and frozen foods, making for an easy to prepare dish. This preparation of buffalo “pie” is a tater tot-topped casserole and a satisfying meal.

Ingredients
- 3 lbs ground buffalo meat
- 32 oz frozen tater tots
- 1 (15 oz) can of corn
- 1 (15 oz) can of green beans
- 1 (15 oz) can of carrots (diced)
- 1 (15 oz) can of cream of mushroom soup
Directions
- Brown the ground buffalo meat in a skillet or frying pan over medium high heat. Drain fat completely.
- Preheat oven to 450°F.
- Drain and rinse all the canned vegetables.
- Combine the browned meat, vegetables, and canned soup in large bowl.
- Spread the mixture into a casserole dish. Top mixture with the tater tots.
- Bake in preheated oven for 25-30 minutes, until heated through.
- Serve hot.
