Cajun Shrimp

Cajun dishes are known for their spicy notes and heartiness.  This style of cooking developed in the Southern reaches of the United States after Acadian immigrants fled Canada in the 18th century. Inspired by rural French cooking, Cajun cuisine was developed by a population that lived off the land, adapting over centuries of cultural influences and geographical changes. Shrimp and other seafood are common ingredients in Cajun foods.

  1. Pour about ½ tablespoon olive oil into a large skillet set over medium heat.
  2. Add onion and bell peppers to the hot oil and sauté for about 5 minutes until tender.
  3. Stir in garlic and corn. Cook for 1 minute and then transfer the vegetables to a bowl.
  4. Pour the remaining olive oil into the pan.
  5. Place some of the shrimp into the hot oil in a single layer and season them with salt, pepper, and Cajun seasoning. Cook the shrimp in batches to avoid overcrowding the pan.
  6. Cook shrimp about 2–3 minutes before flipping and cooking the other side for 1–2 minutes until they are no longer pink.
  7. Return the vegetables to the pan and add the lemon juice, stirring until combined.
  8. Garnish with chopped parsley and serve hot.
