Carne frita con cebolla is Spanish for fried meat with onion. This simple dish is said to be a staple of the Puerto Rican diet mostly because it is easy to make and requires few ingredients. It is typically made from pork or beef steak and served with pigeon peas and rice or potatoes.

Ingredients
- 1 lb pork steak
- Salt, to taste
- Ground black pepper, to taste
- Olive oil, as needed for cooking
- 1 large onion, julienned
- 1 bay leaf
Directions
- Cut the meat into ½-inch cubes and season it with salt and pepper.
- Coat the bottom of a large skillet with olive oil and set it over medium heat.
- Add the onion and bay leaf to the hot oil and sauté for about 5–7 minutes.
- Transfer the onion and bay leaf to a bowl and return the skillet to the heat.
- Place the meat into the hot skillet and sauté for 7–10 minutes, stirring to brown all sides.
- Return the onion and bay leaf to the pan and continue to cook, while stirring, about 3–5 minutes until onions are completely browned and beginning to become crispy.
- Discard the bay leaf.
- Serve the meat and onions hot with pigeon peas and rice or potatoes if desired.
