It is a lean beef steak that is charred on the outside and cooked to the desired doneness on the inside. Chicago has long been a hub for cattle ranching and historically it’s been one of the top meat-producing cities in the country. This has led to the city being known for its steakhouses. Chicago-style steak is crispy on the outside while juicy and tender on the inside. It is often served topped with a buttery blue cheese sauce.

Ingredients
- 4 beef steaks, each at least 2 inches thick
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- Canola oil, as needed
Directions
- Place steaks on a plate, cover the plate with plastic wrap, and let them rest at room temperature for 30–40 minutes.
- Preheat an outdoor grill to high heat.
- Season steaks on both sides with salt and pepper, and then brush them with canola oil.
- Place the steaks on the hottest part of the grill and cook, flipping them every 3 minutes, until they are charred on both sides.
- Use an instant-read meat thermometer to confirm that the internal temperature of the steaks has reached 145°F.
- Transfer the steaks to a serving platter and let them rest for 3–5 minutes before serving.
