Whether called a hoagie, sub, grinder, or hero, they’re all a type of sandwich. Created using a full loaf and stuffed with a variety of fillings, the different names are regional and stem from East Coast Italian immigrants. The name “hero” dates to a 1936 New York Herald Tribune food article, in which the sandwich was described as so large, “you had to be a hero to eat it.” This recipe places cheesy chicken Parmesan between a toasted roll, creating one “hero” of a sandwich.

Ingredients
- ¾ cup all-purpose flour
- Kosher salt, to taste
- Ground black pepper, to taste
- 4 eggs
- ½ cup whole milk
- 1 cup plain breadcrumbs
- 1 cup freshly grated Parmesan cheese (plus more to serve)
- 4 chicken thighs (boneless, skinless, pounded to ½-inch thickness)
- 1 cup marinara sauce
- 8 slices Provolone cheese
- 4 (6-inch) hero rolls (split lengthwise, brushed with olive oil and toasted)
- Olive oil, as needed for frying
Directions
- Preheat oven to broil and place a baking rack inside a baking sheet.
- Place flour in a shallow bowl and season with salt and pepper.
- Whisk eggs and milk in a separate bowl.
- Mix breadcrumbs and Parmesan cheese in another shallow dish and season with salt and pepper.
- Season chicken thighs on both sides with salt and pepper.
- Dredge chicken in flour first, shaking off any excess.
- Dip chicken in egg mixture and then dredge in breadcrumbs, shaking off excess.
- Pour one inch of olive oil in a large pan and heat over medium high.
- Cook chicken, in batches, until golden brown and crisp on both sides, 3–4 minutes per side. Place chicken on prepared baking rack.
- Top each piece of chicken with a spoonful of marinara sauce and two pieces Provolone cheese.
- Place chicken under broiler until cheese melts, about 2–3 minutes.
- Put a piece of chicken in each toasted hero roll, adding a couple spoonfuls of marinara sauce.
- Sprinkle with Parmesan cheese.
- Slice in half and serve.
