Trout is an abundant game fish in the fresh waters of Virginia, as well as many other states. This recipe shows a simple way to eat trout, lightly breaded and pan fried. Species of trout include Rainbow trout, Brook trout, and Lake trout, among others. Although trout is interchangeable with salmon for most recipes, trout has a somewhat milder taste than salmon.

- Remove and discard the gills of the fish, and rinse fish under cold water.
- Heat oil in a large skillet over medium heat.
- Mix flour, cornmeal, salt, and ground black pepper in a shallow dish.
- Coat fish all over with the flour mixture, raise heat to high, and fry fish for about 4–6 minutes per side, until fish flakes easily when prodded with a fork.
- Remove fish from pan and let drain on paper towels.
- Garnish with lemon wedges and serve hot.
