Fresh produce combined with grilled, dried beef topped with a sweet, sour, salty, and spicy dressing—this popular Vietnamese salad has a lot of flavor. Called gỏi du dủ in Vietnamese, this dish is a medley of shredded green papaya and grilled beef jerky served with a sweet-sour-salty gỏi sauce.

Ingredients
- 1 Tbsp salt
- 4½ cups water, divided
- 1 lb shredded green papaya strips
- 1 cup basil leaves
- 2 tsp sugar
- ¼ cup fresh lime juice
- ¼ cup fish sauce
- 2 tsp sweet chili sauce
- 8 oz Vietnamese beef jerky
Directions
- Dissolve the salt in 4 cups of water, add the papaya, and let rest for 15 minutes.
- Drain the papaya and squeeze to remove excess liquid.
- Combine the papaya and basil leaves in a large bowl, tossing to mix.
- Stir together the sugar, ½ cup water, and lime juice in a small bowl, until the sugar dissolves.
- Add the fish sauce and sweet chili sauce, stirring to combine.
- Pour the dressing over the papaya and basil, tossing to coat.
- Grill the beef jerky quickly just until warm and then cut it into thin strips to match the papaya strips.
- Divide the salad among serving platters and top each with beef jerky.
