Hawaiian Haystack

This dish consists of a base of cooked rice that’s layered with a variety of toppings. Meat or beans, vegetables, and a variety of condiments “stack” up when plated. Served buffet-style, haystacks are fun meals to prepare. Dating to the mid-1900s, haystacks are popular with several religions in the United States, including Seventh-day Adventists, Mennonites, and Mormons. Also known as a “chicken sundae,” a Hawaiian haystack has no connection to Hawaii aside from ingredients that include coconut flavor and pineapple.

  1. In a saucepan, melt the butter over medium heat, then add the garlic.
  2. Add the flour, whisking quickly for 1 minute.
  3. Add the salt, pepper, garlic powder and onion powder, cream, and half of the coconut milk.
  4. Whisk and bring to a simmer, cooking about 2 minutes until thickened.
  5. Whisk in remaining coconut milk and sour cream.
  6. Add the chicken and toss to coat. Adjust seasonings to taste.
  7. On individual plates add a bed of rice then top with chicken, with the gravy poured over all.
  8. Arrange other toppings in small dishes, providing serving utensils as necessary for diners to customize their haystacks.
