Hunan cuisine was developed over 2,100 years ago in southeastern China along the Yangtze River. Local game, crab, fish, and turtle were all used in early Hunan dishes. The cuisine tends to be spicy. This pork recipe was likely introduced to America by Chinese immigrants. Some Americanized Hunan recipes tone down the heat slightly to accommodate US palates.

Ingredients
- ¼ cup Asian toasted sesame dressing
- 2 Tbsp hoisin sauce
- 1½ tsp lite soy sauce
- 1 tsp lemon zest
- 1 Tbsp oil
- 2 red bell peppers, deseeded and coarsely chopped
- 2 jalapeño peppers, deseeded and chopped
- 1-inch piece ginger root, peeled and thinly sliced
- 2 garlic cloves, thinly sliced
- 1 lb pork tenderloin, cut into bite-size pieces
- 5 sprigs fresh cilantro, chopped for garnish (optional)
Directions
- Whisk together the sesame dressing, hoisin sauce, soy sauce, and lemon zest in a small bowl.
- Heat the oil in a wok or large skillet set over medium heat.
- Add the peppers, ginger root, and garlic to the hot oil and sauté for about 1 minute.
- Add the pork and sauté for about 10 minutes, until browned.
- Stir in the dressing mixture and bring to a boil, stirring frequently.
- Pour the meat mixture onto a serving platter and top with cilantro, if using.
- Serve hot.
