A classic combination of meats, cheese, and vegetables, the Italian sub is firmly entrenched in US cuisine. It was created by baker Giovanni Amato in Portland, Maine in 1903. He created the sandwich, also known as a grinder, at the request of dockworkers who bought bread from his street cart. A variety of meats are used for a full flavor and can include salami and capicola. Other variants include adding pickles, green pepper, and black or kalamata olives.

Ingredients
- 1 large Italian sub roll
- 1 Tbsp Italian vinaigrette
- ½ Tbsp balsamic vinegar
- ¼ lb provolone cheese (sliced)
- ⅓ lb ham
- ¼ lb mortadella
- ¼ lb hot soppressata
- 3 fresh Campari tomatoes, sliced thick
- ¼ small red onion, sliced
- 2 handfuls loose-leaf lettuce
- 2 Tbsp chopped banana peppers
- Salt, to taste
- Freshly ground black pepper, to taste
Directions
- Slice sub roll in half lengthwise with serrated knife.
- Placing roll on sheet of wax paper, drizzle inside of bun with Italian vinaigrette and balsamic vinegar.
- Add provolone, ham, mortadella, soppressata, tomatoes, onion, lettuce, banana peppers, salt, and pepper.
- Wrap sandwich tightly in wax paper and slice into four quarters.
- Eat immediately or wrap in more wax paper until ready to eat.
