Kapsalon is a layered dish made of French fries, shawarma meat, and gouda cheese topped with salad and sauces. Created in 2003 in the Netherlands, kapsalon is a Dutch term meaning “hair salon.” The name references the dish’s inventor, Nathaniël Gomes, a hairdresser in Rotterdam, who requested a combination of his favorite foods at a nearby restaurant. Employees serve “the usual order for the kapsalon” in disposable foil pans. The interesting creation soon caught the eye of other customers who began ordering it as well. Traditionally made with shawarma and gouda, substitutions include chicken or fish and whichever type of cheese is preferred.

- Bake French fries in the oven according to package directions and do not turn off the heat after removing them from the oven.
- Cut the shawarma into strips.
- Warm the oil in a skillet set over medium heat and fry the strips for about 6 minutes or until cooked through.
- Spread the cooked fries out into an even layer inside a large foil pan or divide them equally between two smaller foil pans.
- Cover the fries with the meat, spreading it into an even layer.
- Sprinkle the meat with a layer of cheese.
- Bake in the oven for about 5 minutes or until the cheese melts and then remove from the oven.
- Chop the lettuce, tomato, onion, and cucumber into small pieces and toss them together in a large bowl.
- Sprinkle the salad mixture over the melted cheese, top it with garlic sauce as desired, and serve immediately with hot sauce on the side.
